What actually changes behind the cabinet

Three things change, and the hole in the counter is not one of them. The first is the electrical supply: an induction cooktop takes its whole output from the house wiring, so it wants a circuit of its own, sized from the rating plate of the appliance you finally choose and run by an electrician. That figure cannot come from a web page; before the model is settled it is a guess.

The second is the space beneath the deck. Induction electronics live in a shallow box under the glass and need air moving around them, which puts a condition on the drawer or the wall oven you expected to keep there. The model’s own installation instructions decide it.

The third is easy to leave out of the plan altogether: the ventilation that has to go with it, decided by the appliance and the room, not by the fuel you have picked.

The gas line is still there afterwards

Take the gas top out and a live branch of the house’s pipework is left behind the cabinet. It has to be shut off and capped by a gas fitter, which is neither our work nor the electrician’s. Small work on its own; a serious oversight when forgotten.

What a working gas top is still worth

A Wolf gas cooktop that lights on every burner and simmers where you set it is not an appliance with a problem; it is an appliance running on a fuel that has gone out of fashion. Changing it costs the new cooktop, the electrical work, the gas work, the cabinet work and whatever the extraction turns out to need.

Set against that, the faults that end a gas top are usually single, named parts with numbers still behind them. Older kitchens in Cheviot Hills meet the mirror image of the problem: a compact room in a house whose panel was never laid out for a second heavy circuit, and a cooktop whose real complaint is one electrode.

Who does which part, and the part we do not do

An electrician runs and terminates the circuit. A gas fitter deals with the supply being retired. A cabinetmaker, or whoever delivers the appliance, adjusts the opening and what sits below it. We are none of those trades: we repair cooking appliances, so once an induction cooktop is in and working, a dead induction zone or a control panel that stops answering is ours to measure.

Induction is quicker and easier to keep clean. It is also a bigger job than the price on the appliance suggests, and that gap is where the regret lives.
